Seafood Paella (Paella de mariscos)

Ok, this is one of my favorites and probably the most known abroad Spanish food.
Nevertheless, you will never taste a better Paella than the one in Valencia.


Ingredients

I'm going to try my best to measure rice and everything, just like my mom did.

* 3 coups of rice
* 6 king prawns
* 6 crayfish (if you prefer, you can add more prawns instead)
* 500grs of mussels
* 500 gr of shrimps
* 500 gr of clams
* 1 onion
* 1 smashed tomato
* 1 head of garlic
* Pees (only if you like)
* Parsley
* Saffron
* Olive oil and salt



Cook

First of all, lest wash all the fish. Then, boil all the fish together during one hour. After that, strain the fish (everything but clams and mussels), but do not throw away the water, we will use it! Just keep the water in the heat for another 10 or 15 minutes. Now, we strain the water again and pour it on a bowl. Place the fish on a plate, and the mussels and clams on another, do not mixed them altogether.

Now, the best is to have a Paella pan... if not, try a nice round pan. Add six olive oil spoons and heat. Now we are going to fry the head of garlic and onion (cut in small slices). When done, add rice and place the smashed tomatoes on top. In about 2 minutes, add six coups of the water we used to boil all the fish.

From the paella, grab a spoon of soup and add saffron and parsley, and smash it altogether, then add it to the paella.

Let it boil for about 20 minutes (remove if necessary only), until there is no water at all, then add salt and all the fish except crayfish, we will place it on top when everything else is done. (Add the pees if you decided it you like it). Remove it and wait for another 3 or 4 minutes. Place the crayfish on top (or mussel, or even both, be creative) so that it looks nice. Then turn off the fire and let it rest for 5 minutes (better if you cover it with a dishcloth).Add some lemon slice if you like.
