Ensaladilla rusa (russian salad)

The "Ensaladilla rusa" is a typical Andalusian that you can find also served as a Tapa in most places. Please enjoy!

Ingredients
4 or 5 potatoes
2 eggs
1 carrot
1 can of red peppers
lettuce
1 can of pees
1 or two cans of tuna (in oil) 
Mayo (if you prefer making it yourself, please scroll down for directions)



Cook

First of all, we need to cut the potatoes and carrot in small pieces (about 1 or 2 inches squares), then boil them altogether with the eggs. Add some salt to the water when boiling.
When the potatoes are already boiled, place them on a dich long enough with the carrats and smash them. Remove the eggs' shell.

Now, cut the lettuce and red peppers (do not forget to leave at least a slice of pepper for later) in small pieces and add them to the dish; drain the pees and add about 4 or 5 spoons, add the tuna (also drained), and add also one of the eggs cut in small pieces as well. Now add mayo (I always use Heinz, but it is always better if you make it yourself).

Toss and turn so that everything is well mixed.

Now, grab the other egg we boiled and put a side the yolk. Cut the white in slices to place on top of everything and make it look good. Smash the yolk and sprinkle it all over. Use the rest of the pepper to decorate as well.

There you go! Put it on the fridge and serve cold as a tapa or salad. Some people also add olives on top and shrimps for decorations.

How to make Mayo: you need eggs, oil, salt and vinegar or lemon (I personally prefer lemmon). Use a cup of oil for each egg.
Now, put the eggs on the mixer and add the vinegar or lemon and salt. Mix it not so fast for a start, and pour the oil slowly.
Place on the fridge.
